HOTEL MUSSE dining “Ginza Breakfast Lab” restaurant on the 2nd floor of “Hotel Musset Ginza Meitetsu” opens on
July 1, 2021 (Thursday).
This buffet restaurant offers breakfast and lunch based on the concept of “a buffet with small bowls of food prepared by artisans with their special skills.
Our dishes are handmade by artisans from scratch, one small bowl at a time.
In addition to the small bowls of food, the restaurant offers “Golden Dashi Shabu Shabu,” which the artisans prepare by boiling water in homemade dashi broth, “TKG,” which is enjoyed with Tama local egg “Tamaran” and homemade soy sauce (white or black), rice cooked with the monthly special, crispy monaka, etc. The restaurant is filled with many specialties.
We offer a hands-on breakfast experience that you will want to try.

The dishes at Ginza Breakfast Labo are handmade by chefs with extensive knowledge of Japanese and Western cuisine. From the basics of Japanese cuisine, such as how to make dashi (Japanese soup stock) to how the ingredients are cooked and seasoned, our dishes look and taste as good as those served at a Japanese-style ryotei restaurant.
We aim to provide the best breakfast in Japan so that our guests will come all the way to our restaurant to enjoy it.

We propose a new type of buffet at After Corona.
Any number of small bowls of your choice, any number of times.
The small bowls and 9 square trays make serving easy and create color.
The flavors of each dish do not mix, so you can enjoy the original taste.

Seasonal Ingredients, Tokyo Cuisine
Our seasonal menu features a wide variety of seasonal ingredients. Japanese cuisine focuses on homemade soup stock, while Western cuisine recreates the nostalgic flavors of Ginza.

We also offer a variety of homemade desserts such as our very popular French toast, a variety of homemade desserts such as “monaka,” which you can make by yourself, and seasonal sweets!

Golden shabu shabu of Japanese brand pork
We use “homemade golden dashi broth” made from a combination of bonito and kelp, which is delicious not only with meat, but also with vegetables.
Furthermore, by repeatedly “shabu-shabu”, the dashi broth, which is infused with the flavor of pork, changes over time, giving it a different taste from the ichiban dashi broth, and you can enjoy the taste of the golden dashi broth alone.
This is our signature main dish, and our theme is “delicious even if you eat it every day without getting tired of it.

Monthly takikomi-gohan (cooked rice)
In addition to takikomi-gohan, we also offer our signature brand white rice, brand eggs, and a variety of toppings, so you can enjoy them at your leisure at any time.

Seasonal special Japanese and Western small bowls
Our seasonal “KOBATSU” menu changes seasonally, using seasonal ingredients and carefully “cooked” one by one with the skill of our chefs.
The hibachi menu changes every month: September, December, March, and June.

HOTEL MUSSE GINZA MEITETSU” is a hotel specializing in accommodation with compact space but functional facilities with desk space and cargo space, and offers cosy accommodations.
