What is Ginza Breakfast Lab?
A buffet-style restaurant aimed at the best breakfast
“Ginza Breakfast Lab” restaurant on the 2nd floor of “Hotel Musset Ginza Meitetsu” opens on July 1, 2021 (Thursday).
This buffet restaurant offers breakfast based on the concept of “a buffet with small bowls of food prepared by artisans with their special skills.
Our dishes are handmade by artisans from scratch, one small bowl at a time.
In addition to these small bowls, we offer a variety of other dishes packed with our unique touches, including “Golden Dashi Shabu Shabu” prepared by our chefs using our homemade broth, “Raw Egg over Rice” served with Algitt Iodine Egg® “SANUKI NO AKADAMA” and soy sauce carefully selected by our Executive Chef, and “Crispy Monaka You Make Yourself.”
We offer a hands-on breakfast experience that you will want to try.
Buffet-style restaurant aiming to be the best breakfast in Japan
What is the best breakfast in Japan?
What is a truly delicious breakfast? Because this is a hotel in Ginza with a diverse range of guests, needs vary. In order to meet these diverse needs meticulously, we have adopted a buffet style that allows you to eat a variety of your favorite foods little by little.
Commitment to Handmade
Easy to serve and good looking 9-square tray
Seasonal Ingredients, Tokyo Cuisine
We will continue to evolve every day so that our guests will feel that their stay and breakfast experience at Hotel Musset Ginza Meitetsu was the best experience of their trip, and that they will stay at Hotel Musset just to have this breakfast. We plan to share the findings from our daily challenges, or the “research results” of our laboratory, on various social networking services.
3 Commitments
Point 1
commitment to handmade
The dishes at Ginza Breakfast Labo are handmade by chefs with extensive knowledge of Japanese and Western cuisine. From the basics of Japanese cuisine, such as how to make dashi (Japanese soup stock) to how the ingredients are cooked and seasoned, our dishes look and taste as good as those served at a Japanese-style ryotei restaurant.
We aim to provide the best breakfast in Japan so that our guests will come all the way to our restaurant to enjoy it.
Point 2
Easy to serve and good looking 9-square tray
We propose a new type of buffet at After Corona.
Any number of small bowls of your choice, any number of times.
The small bowls and 9 square trays make serving easy and create color.
The flavors of each dish do not mix, so you can enjoy the original taste.
Point 3
Seasonal Ingredients
You will enjoy a menu that uses a variety of seasonal ingredients. The kobachi menu changes seasonally (March, June, September, and December).
■ After-dinner desserts are also available!
We also offer a variety of homemade desserts such as our very popular French toast, a variety of homemade desserts such as “monaka,” which you can make by yourself, and seasonal sweets!
You can enjoy them all the way through to after-dinner tea time and dessert time.
Menu Details
■At the live kitchen corner, chefs will serve shabu-shabu. Please enjoy freshly prepared dishes with a different taste prepared by professionals.

Golden shabu shabu of Japanese brand pork
We use “homemade golden dashi broth” made from a combination of bonito and kelp, which is delicious not only with meat, but also with vegetables.
Furthermore, by repeatedly “shabu-shabu”, the dashi broth, which is infused with the flavor of pork, changes over time, giving it a different taste from the ichiban dashi broth, and you can enjoy the taste of the golden dashi broth alone.
This is our signature main dish, and our theme is “delicious even if you eat it every day without getting tired of it.

Seasonal special Japanese and Western small bowls
Easy to serve, the 9 square meter tray with small bowls of food looks great in photos!
Our seasonal small bowls menu changes seasonally, using seasonal ingredients and carefully “cooked” one by one with the skill of our chefs.
The hibachi menu changes every month: March, June, September, and December.
